Orzo Pile On Vegan Serves 2

Ingredients

4 ounces (½ cup) of chickpea orzo
1 oz ginger peeled and minced
6 ounces of green beans
Trimmed and cut into small pieces
1 lime
Zested and juiced
¼ cup crispy onions
2 ounces fire roasted diced tomatoes
Roughly chopped
2 ounces vegan mozzarella
Fresh basil

Preparation

Step 1

Boil water in a medium saucepan
Add chickpea orzo and cook for 9 to 11 minutes
Once completed – drain water with a strainer

Step 2

Peel and mince 1 ounce of ginger
Add ginger to a non stick skillet using olive oil
Cook for 1 minute on medium heat
Add cut up green beans
Cook for about 2 ½ to 3 minutes
Remove from heat and let cool for 3-4 minute

Step 3

Cut lime in half, zested and juiced
Sprinkle lime over green beans

Step 4

Add crispy onions and diced tomatoes to green beans

Step 5

Combine the green bean mixtures and orzo into your favorite bowl
Add vegan mozzarella and basil
